The following catering menu items feature Colorado-grown lamb, chicken breast, or fresh seafood served with wild rice pilaf, flatbread, and tzatziki sauce:

Lamb Steak
Flamed grilled & topped with a pesto of fresh mint, basil, cilantro, garlic, served with garlic mashers

Stuffed Eggplant
One-half grilled eggplant filled with ground lamb, roasted vegetables, fennel, feta cheese, surrounded with wild rice pilaf

Grecian style Trout
Whole sautéed trout filled with dates, spinach, toasted almonds, basted in Pernod Béchamel sauce

Pork Scaloppini
Medallions of pork loin seared in sherry with shitaki mushrooms served with garlic mashers
