Thank you for inquiring about our catering services! There are two main components we could provide for your event. The first is the food and the second is the staff.

The Menus:
We offer a variety of menus designed to cover most events.  If you decide to book your party with us, we can prepare a customized menu to fit the theme of your event.  Menu pricing is also flexible based upon your needs. 

There are many components that go into the preparation of each party we cater and need to understand the entire scope of your event requirements before we can quote you an exact price.

For example, there is a $3.00 per person up charge for parties of 30 people or less.  Like the price of gas, food costs continue to rise and some items are subject to availability.  The location you select for your event might affect the pricing. Some venues have professional “Commercial” sized NSF kitchens; some will have no kitchen at all.  It could be necessary to rent an extra oven and have it delivered to the site

…there are many other factors.  So we need to prepare a proposal in order to provide you with useful information. 

Menu pricing includes chaffing dishes, basic plastic ware, plastic utensils, and paper napkins. Menu pricing does not include sales tax, staffing, gratuities, tables, trash cans, large kitchen equipment, linens, china, flatware, etc.

The Staffing:
We staff as leanly as is feasible.  Balance that with keeping in mind we want to provide you with a high quality event.  We hope you will be impressed with our skillful and energetic staff and their performance and professionalism.

We also do not desire to overwork our staff, because they deserve to be treated well.  We require them to work safely and efficiently.  The Servers & Kitchen Staff are not asked to lift excessive weight to speed up unloading, and they will not be asked to forego required breaks to shorten prep time.

The duties Kitchen Staff includes unloading the truck or car. This has to be done with care and safety to avoid damage to the cargo, venue, or to themselves. Sometimes the food prep area has to be organized.  Room made in the refrigerators, personal items cleared from counters… adding to set up time. The Kitchen Staff prepares and heats appetizers or main entrees, plates salads, desserts, and organizes the flow of food out of the kitchen. 

The Serving Staff will also help unload cargo, sometimes a distance from the parking area to the final destination. They layout the buffet tables and set up coffee & tea bars.  If necessary they will place linens, set tables with china, flatware, and then change into their serving uniforms.  At wedding receptions they may be asked to cut and plate the wedding cake... and in the end help bus, break down, clean and reload the cargo.

Labor Rates:
$18hr. per Kitchen Staff or Servers.
$20hr. for Pasta Bar Cooks
NOTE: The labor hours we calculate are an estimate.  We base our calculations on past experience, but since no event is exactly the same, we may need to adjust the bill and collect or, if applicable, issue a credit for extra labor hours at the end of your event.

General Guidelines for “Sit Down” plated service are:
1 Wait Staff per 16-20 guests.  Event size and menu selection will determine the size of the Kitchen Staff.

General Guidelines for “Buffet” style service are:
2   Servers and 2 Kitchen Staff   per 50-75     guests
4   Servers and 2 Kitchen Staff   per 76-150   guests
6   Servers and 2 Kitchen Staff   per 151-200 guests
8   Servers and 3 Kitchen Staff   per 201-300 guests
12 Servers and 3 Kitchen Staff   per 301-400 guests

Servers and Kitchen Staff are booked for a minimum of four hours. Continued...

Catering in Pagosa Springs
You can formalize a “Buffet” style service by using china, flatware and linen instead of basic plastic and paper napkins which are included in our menu quotes. Higher end plastic products and paper napkins are also available at an additional charge.

Please note the above recommendations are guidelines.  Your event may require more or less staff depending on:

  • Your choice of venue: Is there a kitchen on site to stage out of?
  • Menu selection: Complicated dishes require more on site preparation and assembly.
  • Your own personal style: Is your affair very casual? Maybe you’ll be more comfortable with a longer serving time frame.  If so, it might be possible to use less “Buffet” servers.
